Great product and cooks a tart to perfection Dec 22, 2008 I have wanted a tart pan for awhile now and found a recipe I really wanted to make for a party I was giving. I found this through my usual source "Cooks Illustrated"...and it performed as it should..my crust came out perfect and it slipped out of the ring perfectly as well. One helpful hint: To remove the ring just take the tart pan and place it on top of an unopened can, rest the bottom on the top of the can and the ring will just "slide up"...
Fantastic! Dec 16, 2008 Turns out a delicious, tender-crisp crust. I am *not* a frequent baker, and can't maked a decent rolled crust. If you use a crust recipe that involves pressing the crust into the pan, anyone can use this tart pan to make an impressive dessert. (Great tip: use a coffe mug to help gently and easily press the crust into the fluted sides of the pan.) Lovely with a graham craker crust, too.
Oh... in case you don't know, you will not get a great crust with a non-stick pan. And these are easy to clean up, in part because of the removable bottom. Would buy again in a heart-beat.

9 inch tart pans - no complaints Oct 17, 2008 These tart pans are exactly what they claim to be. Our old ones have seen so much use and are, consequently, so battered and discolored, over the course of 20+ years, that even the trash can tried to reject them.
The news ones, of which we purchased 4 (if 2 lasted 20+ years, we figure 4 should take us until we get tired of baking), are exactly the same as our original 2. They work perfectly, then clean up easily. We have no complaints about them. If we did, we would not have bought 4 more.

works great but don't leave in standing water Nov 09, 2007 This product works great. I love it b/c it gives tarts and quiches a nice fluted edge, cooks evenly, and has NO Teflon coating (a health concern since studies have shown it leaches and scrapes off into food and may be linked to memory loss).
However, since it's NOT made of stainless steel or aluminum you do NOT want to leave it in standing water. I left mine to soak for a few hours, forgot about it, and found the beginnings of rust around the edges (which cleaned up quite easily with dish soap and elbow grease).
This pan does cook great, I will get much use out of it! The bottom pops up easily reveling the crispy crusty buttery edge and rests easily on a plate for a beautiful presentation, and EASY serving.
Bake ware without Teflon is becoming hard to find, so I was thrilled when I found this specialty shape! Plus, the price is right!
